At first very intense on the nose, with fresh fruit notes, particularly ripe citrus fruits. A second refined floral nose with notes of white flowers and fruits (white peaches, pineapple). A supple, harmonious attack on the palate, very rounded. Vinosity that is not excessive, supported by excellent freshness. Beautiful pale golden yellow color with gentle green reflections, a vibrant, luminous colour. Active effervescence with a persistent release of bubbles.
A perfect champagne for aperitifs, particularly in spring and summer. It is an excellent complement to seafood and shellfish; perfect with a sea bass or bream tartare. It would also be very good with seared sole.

Disgorged in November 2017 with five grams per liter dosage, the 2007 Dom Ruinart Blanc de Blancs opens in the glass with a lively bouquet of citrus oil, warm bread, green apple and oyster shell, linden and beeswax. On the palate, it's medium to full-bodied, taut and chiseled, with a taut and concentrated core, racy acids and a long, chalky finish.

This is a beautiful wine with minerality, toast and tight acidity mingling with the citrus flavors that are still very present. The balance of the wine is impeccable, on the cusp between youth and maturity at the point when it has just become truly ready to drink.
